Wellness Classes on The Delights of Soluble Fiber During these four, half hour classes Terri, The Food Fairy focused on sharing information about snacks that are high in soluble fiber. Excited by research that has shown soluble fiber reduces the inflammation often associated with heart disease and obesity and also boosts the immune system http://www.sciencedaily.com/releases/2010/03/100302171531.htm, Terri created a class and a menu to go with it. “I know most of us do not get 21-38 grams of fiber in a day, as is recommended, and 1/3 of that is supposed to be soluble. Who actually knows enough to make food choices to meet that criteria? So, I thought snacks that support that would be most helpful to all of us, including me!” Terri brought a smorgasbord of goodies for folks to sample; bean dip with millet flax crackers, yogurt with strawberries and almonds, apples with cheddar cheese, dates stuffed with walnuts and a special “Food Fairy” smoothie are a few of the choices the enthusiastic staff had to taste. “I got their attention by starting the class off with a mini Pumpkin Oat Bran Muffin. I think being more aware of this important nutritional component (soluble fiber) will indeed help guide us to make better snack choices and perhaps help with the obesity issues we face as well as strengthening the immune system which is helpful with the approaching winter and flu season.”
